Roasted Parmesan Asparagus
This is such a fresh and easy side that only takes minutes to make. It goes well with literally anything from beef to seafood to chicken dishes.
Ingredients:
1 bunch of asparagus (trim/cut off ends)
1 tablespoon olive oil
salt, pepper, garlic powder
1/2 cup grated or shredded Parmesan cheese
Preparation:
Preheat oven to 400
Line a sheet pan with foil or spray with cooking spray.
Place asparagus on pan.
Drizzle with oil and season with salt, pepper, and garlic powder and then use your hands to mix asparagus around so all of it is coated in the oil and seasonings.
Cook for 10-12 minutes. (sometimes asparagus is thick and other times it is thin so adjust time for that)
Remove from oven and sprinkle with either grated or shredded cheese (each gives a different result)
Cook another 5 minutes if using grated cheese and a little longer for shredded cheese. (I like the shredded cheese to crisp up.)
Remove from oven and enjoy!
