Parmesan Zucchini "Fries"















We are always trying to add more fresh veggies into our diet especially in the summer when they are plentiful.  But using the same few recipes over and over gets old fast so I like to ask friends and look online for new ideas.  I found several varieties of this recipe out there and decided to give it a try.  These zucchini "fries" are a light and tasty side that takes very little time to make.  Serve with a side of ranch for dipping.

Ingredients:
2-3 zucchini
1/2 cup grated parmesan cheese
1/2 Italian seasoned panko crumbs
olive oil
salt & pepper

Preparation:
Preheat oven to 350.
Cut zucchini in half both length and width wise.
Cut halves into quarters or even smaller if you can.
Place zucchini strips into a bowl and lightly coat and with salt, pepper, and olive oil.
Mix together panko and cheese and put in a Ziplock bag.
Toss 3-4 zuchinni strips into bag, close, and shake until they are coated well.
Repeat until all are coated and placed on a baking sheet.
Bake about 8-10 minutes.
Broil on high for about 3 minutes to crisp edges.
Remove from oven and allow to cool.
Serve as a side or appetizer with a side of ranch!
