Parmesan Crusted Trigger Fish
This recipe is a great fried fish alternative and can be made with any flaky white local fish. Trigger fish is one of my new favorites. It is a year round fish available from the Carolinas to the Caribbean. It's a sweet white fish that's kind of a cross between flounder and grouper. It's a little flaky and sweet like flounder but still firm like grouper. I love it!
Ingredients:
2 trigger fish fillets
1/2 cup Italian seasoned bread crumbs
1/2 good quality grated Parmesan cheese
2 tablespoons olive oil
Dill Sauce:
2 tablespoons greek yogurt
2 teaspoons milk
1 teaspoon dill
Preparation:
Rinse fillets and pat dry
Brush fillets with olive oil and season lightly with salt and pepper on both sides.
Mix bread crumbs and Parmesan to a shallow dish.
Dredge fillets one at a time in mixture on both sides until well coated.
Place fillets on a foil lined sheet pan and bake about 12 minutes at 400 degrees depending on thickness.
If fish isn't nice and browned on top, broil on high for 2 minutes.
Mix dill cream sauce together and serve with fish.
