Glazed London Broil






Two words of advice:  Marinate overnight & Do Not Overcook!  At rare to medium rare...such a treat!  I borrowed this glaze from Paula Deen and adjusted it just slightly.  We have this place in Pawleys called High Country Olive Oil and they have some amazing oils and balsamics.  There is this one that is a Sweet Peach Balsamic that it so tasty on salads and in sauces so I decided to use it here!  It worked!

Ingredients:
A 2 pound London broil
1/3 cup balsamic vinegar (I used a peach balsamic for this one but you can use traditional or flavored)
1 garlic clove smashed
1 bay leaf
1 tablespoon brown sugar
Salt and pepper
Plus marinade of choice

Preparation:
Marinate London broil overnight (we prefer using a beer, Worcestershire, and garlic cloves)
Set London broil on a plate and season with salt and pepper on both sides.
Let it sit out for a bit so that it comes to room temperature first.
In a small sauce pan, add balsamic vinegar, garlic, and bay leaf and simmer until it thickens, about 10 minutes.
Use a brush to glaze the London broil with the sauce on both sides.
Broil on high about 4-5 inches from heat for 5 minutes per side.
Remove from oven and from pan to a plate.
Let rest for about 5 minutes and slice thin.
