Hot Dog Chili

Your father has many fond memories revolving around chili (lol).  Evidently he used to skip class to go to Royall drug store for a chili and cheese sandwich.  That's because their hot dog chili was so good.  He frequently could be found at the Speedy Chef ordering a chili cheeseburger.  Then there was Sutton's drug store in Chapel Hill, which according to daddy IS the best hot dog chili.  I started making our own chili and freezing it in small portions so that we always have some to make Carolina dogs and burgers.  Here's the recipe I use.

Always taste to make sure it's good!
Ingredients:
1 pound lean beef
3 oz tomato paste
1/2 cup ketchup (more if needed)
2 tablespoons chili powder
1/2 diced onion
2 cloves garlic minced
1 teaspoon sugar
2 teaspoon salt (more if needed)

Preparation:
Cook onions and garlic in a little oil until soft.
Add beef and chop it finely while cooking.  (if you didn't get very lean beef then drain off most of the fat)
Add remaining ingredients and stir together well.
Simmer for 15 minutes.
Be sure to taste it to see if it needs more salt or sweet.  Add more salt if needed or more Ketchup if you want it sweeter.
Use or freeze individual servings in zip lock bags!
