Game Day Pimento Cheese
Pimento cheese sandwiches, fried chicken, and a Saturday afternoon at Kenan Stadium! Growing up with season tickets to UNC Football games, your dad remembers his mom's fried chicken and pimento cheese sandwiches as staples in every tailgate. We have continued the tradition by making our own pimento cheese for Game day spreads at home and in Chapel Hill. Homemade makes all the difference; it's cheaper, tastier, and super simple. I much prefer it as a dip but adding it as a condiment on burgers or the basis of a grilled cheese sandwich takes it to a new level!
Ingredients:
1/2 of an 8 oz bar of sharp cheddar
1/2 of an 8 oz bar of Monterrey jack (use pepper jack if you like spicy pimento cheese)
4 oz of softened cream cheese
1/3 cup mayo
1/3 of a 7oz jar of diced pimentos (about 3 tablespoons)
Cracked black pepper from a pepper mill
salt

Mix all ingredients together well making sure the cream cheese is evenly incorporated and no clumps are left.
You don't need a lot of salt, just a couple of light shakes but be sure to use fresh cracked black pepper.
Add to a container and refrigerate!
