Company Chicken Salad


There are all sorts of ways to make any kind of salad and chicken salad is no exception.  I love all types from the traditional to the fancy.  This is a quick and tasty recipe perfect for serving at a shower or party, or just when you want something a little different.   It's best served as a salad on a bed of lettuce.  

Ingredients:
2 boneless skinless chicken breasts
1 cup of purple grapes, halved 
1/2 cup chopped walnuts or pecans
1/2 cup almond slivers
1/2 cup light mayo
1/2 cup light sour cream
salt, pepper, dill and basil
1 tablespoon chopped parsley (more to sprinkle on top for serving)

Preparation:
Preheat oven to 350.
Spray a pan with cooking spray and season chicken breasts with salt and pepper.
Place chicken on pan and bake about 20-25 minutes until cooked through depending on thickness and size of chicken breasts.
Remove from oven and let chicken cool completely.
Meanwhile, mix mayo, sour cream, 1/2 teaspoon salt, 1/2 teaspoon pepper, a smidgen of basil and dill weed and 1 tablespoon of fresh chopped parsley.
Dice chicken into cubes and mix in chopped nuts and grapes.
Mix dressing into chicken mixture and combine well.
Taste to see if you need additional salt or pepper.
