Beach Day Tuna Salad

There is a mom & pop grocery store at Wrightsville Beach called Roberts. You guys surely remember it! While small in size, you can still get all of the necessities for a day at the beach. Cold beer, produce, sunscreen, and what we think are tremendous salads from the deli. It's a common thing to swing in there for cold beer, ice, and a few tuna or chicken salad sandwiches for the beach. Both are sweet and delicious. Their salads inspired us to start making our own salads for beach days and fresh summer suppers! Just a side note, I am obsessed with this salad on whole wheat Ritz crackers and a thin slice of cucumber! (pictured)
3 cans solid white albacore tuna in water, drained thoroughly
2 hard boiled eggs diced
3 tablespoons mayo
1/4 cup sweet relish
2 tablespoons cottage cheese
1/4 of a lime juice (or lemon if you don't have lime)
cracked black pepper & sea salt to season
Preparation:
Add remaining ingredients and mix well.
Taste salad to see if you prefer to add more of anything.
Season to taste.
