Pea Dumplings - A Walters Supper
I had never in my life heard of pea dumplings until I met your father. This is a Walters family dish from the Appalachia area. Daddy used to have to shell the peas for this dish when he was a kid. It is a great change from chicken 'n dumplings for summer. It's so good with ripe summer tomatoes and green onions.
Ingredients:
2 cans of peas, drained
1 quart of milk
1/2 stick butter
1 chicken bullion cube
salt & pepper
2 cups flour
1/4 cup shortening
1 cup milk
Preparation:
Prepare dumplings first:
Put flour in a large bowl.
Cut in shortening (youtube it to see how lol)
Add milk and mix until just moist.
Move dough to a floured surface.
Roll out dough to 1/4 inch thickness.
Use a pizza cutter to cut squares about 2x2
Put peas, milk, butter, bullion cube, salt and pepper in a dutch oven pot and bring to a boil.
Drop dumplings into broth
Cover and lower heat to a simmer for 20 minutes
