Papa Robert's Vegetable Beef Soup
I could jump in and swim in this! |
This recipe is from my dad and I have been trying to make it as good as his for years now. It is so good on a cold winter day with a gooey grilled cheese sandwich! One thing I love about this recipe is that it always makes enough to freeze for later. Thanks dad!
Ingredients:
2 large cans Veg-All
1 can black eyed peas
1 can butterbeans
1 can shoe peg white corn
2-3 cans petite diced tomatoes
2-3 cans tomato sauce
2-3 cans of water (use tomato sauce cans)
1 lb. lean ground beef
Papa Robert is one of the best cooks around! |
several dashes of Worcestershire
several dashes of hot sauce like Cholula
1 Vidalia onion chopped finely
1 green pepper chopped finely
1/4 of a red cabbage chopped finely (sometimes I leave this out)
salt and pepper
saltine crackers for serving
Preparation:
Cook beef and pork and drain.
Cook onions and peppers until softened in a little oil or butter
Combine all ingredients in a large soup pot
Add more water if needed.
Bring to a boil and then simmer for 45 minutes.
