Our Family Potato Salad
One of my most favorite chefs is Ina Garten. She's great and her recipes are great! Her cookbook Barefoot Contessa Back to Basics is definitely one to have in your kitchen. I followed her recipe for potato salad and your father loved it! We all did. Over the years I have tweaked it a little for taste and convenience but her's is perfect as it is.
Ingredients:
3 pound bag of baby red potatoes
1/2 a Vidalia onion diced
1 cup mayo
2 tablespoons mustard
2 tablespoons Dijon mustard
1/4 cup milk (preferable whole milk or half & half)
Dill weed (this is the secret ingredient - it's in the spice section)
Salt & Pepper
Preparation:
Cut potatoes in quarters
Boil a large pot of water and add potatoes and some salt.
Boil potatoes for about 20 minutes. Use a fork to see if potatoes are tender. If not, add 5-10 more minutes.
While potatoes are boiling, mix the mayo, mustards, milk, onions, and season with salt and pepper.
Add 1/4 cup dill weed to sauce and mix well.
Drain potatoes and add to a big bowl.
While still hot, season well with salt and pepper and mix in the sauce gently.
Refrigerate potato salad or serve warm.
