Grandma's Chicken Salad
This is my mom's chicken salad recipe and it is so simple and good! The key to this is the texture of the chicken. It is a 2 part process for me: chopping the chicken and then using the food processor for a great shred on it. Tasting along the way is key to know if you need to add more of anything. This chicken salad is perfect for summertime packed lunches at the beach!
Ingredients:
2-3 boneless skinless chicken breasts, cut into tenderloins
Celery seed to taste, start with 2 teaspoons
1 cup + mayonnaise
1/2 finely chopped sweet onion
1/4 cup sweet pickle relish
Salt and pepper to taste
Preparation:
Cut chicken breasts into tenders and boil for about 10 minutes (check that they are cooked through).
Remove chicken, dry off with a paper towel and let cool on a plate.
While cooling, mix together all other ingredients in a large bowl.
Once cooled, give chicken a rough chop.
Then add chicken to a food processor and pulse until finely chopped (This is the secret!!)
Fold chicken into mayo mixture and mix well, tasting to see if more of anything is needed.
Place in a container with lid and refrigerate!
