Fresh Peach Pie
Where do I begin?....peach cobbler, peach tea, peach jam, peach short cake......I guess I'll start with fresh peach pie! After moving to South Carolina it became very clear during my first summer here that I would need to find recipes for peaches. I'll never forget giving Avery her first bite of a peach that same summer in SC when she was 6 months old. It was love at first bite!
Ingredients:
2 store bought pie crusts
8 medium sized fresh South Carolina peaches, washed, pealed, and sliced
1/2 lemon juiced
1/2 cup flour
3/4 cup sugar
1/2 teaspoon cinnamon
1 tablespoon unsalted butter sliced thin
1 egg
1 tablespoon water
Preparation:
Mix peaches, flour, sugar, lemon juice, and cinnamon in a bowl and let sit a few minutes.
Pour into pie shell.
Top with butter slices.
Place 2nd pie shell on top or cut into strips and lattice pie.
Whisk egg and water and brush on pie crust edges and top.
Make a few slits on top of pie.
Bake pie for 30 at 400.
Cover with foil and bake at 375 for 40 minutes.
Let pie cool and you MUST serve it with vanilla ice cream!!
