Fire Pit Mountain Trout
When summer heats up at the beach, we love to pack up and head to the mountains for cooler temps. While there we always go fly fishing and enjoy lots outdoor fun. I think Willie and Waylon love it more than anyone! Getting away from work, cell service, tv, and regular life every now and then is good for the family and good for the soul!
Ingredients:
1-2 large mountain trout, cleaned, gutted and remove gills
1 smoked sausage per trout thinly sliced
1 Vidalia onion per trout thinly sliced
1 green onion per trout thinly sliced
1 red pepper per trout thinly sliced
3 tabs of butter per trout
salt and pepper
1 large tin pan
cooking spray like Pam
Preparation:
Spray pam all over both sides of a large tin foil pan
Stuff inside of fish with slices of smoked sausage, onion slices, peppers, and butter
Season generously with salt and pepper
Cover with foil
Cook away from flame for about 20 minutes until fish is cooked through checking every 5-10 minutes.
