Easy Enchiladas
Enchiladas are one of my most favorite dishes! I could eat them weekly and the good thing is that they are super easy and they fill everyone up with leftovers too! I learned this recipe and adapted it for our family from the Pioneer Woman. I make these with both corn and flour tortillas because some of us prefer the corn flavor and some the flour texture. There are so many more yummy things you could add to this recipe to spice it up but we keep it on the down low for Maddie :)
Ingredients:
1 package of corn torillas (sometimes I take the extra time to toast these a bit in a pan and sometimes I don't, either way they are just as good to me)
1 package of taco or fajita size flour tortillas
6 thin cut boneless skinless chicken breasts (I often buy the bone in, skin on because it's a lot cheaper and remove the skin and slice it up myself)
1 pack of taco seasoning (sometimes I make my own with chili powder if I'm out)
1 4 cup package of shredded cheddar or Mexican cheese
2 tablespoons olive oil
1 can green chili enchilada sauce (yum - I prefer the flavor of green chili over red enchilada sauce but you can use either)
Preparation:
Season chicken with taco seasoning
Add oil to a frying pan and heat to medium high
Add chicken and cook through, about 3-4 minutes per side for thin cuts, remove to a plate to cool
Once cooled, shredded with a fork.
Meanwhile you can toast your corn tortillas in a pan if you want to.
Assembly time....
Tortilla, shredded chicken (don't overdo it you need to be able to roll it up), drizzle of enchilada sauce, sprinkle of cheese, roll up and into a 9x13 dish
Repeat assembly with 8-10 per dish. I make one dish of corn tortilla enchiladas and one dish of flour. I always think this will give us leftovers but who am I kidding....
After baking dishes are full, drizzle more enchilada sauce over top but not too much that they will be mushy (Daddy does not like mushy enchiladas).
Finally top with more cheese because let's be honest that's the good part.
Bake at 375 for 20-25 minutes.
Serve with some warmed enchilada sauce, sour cream, refried beans, or chopped salad.
