Chatham's Breakfast Burgers

Chatham's Breakfast Burger
We don't just eat together....we cook together too.  It's important that you learn how to be safe in the kitchen, appreciate all aspects of cooking, and learn how to make basic things yourself.  One of my most favorite memories will always be when Maddie started helping to cook our Thanksgiving meal. The kitchen is not nearly as fun if you are in there alone.  So as you learn to cook and enjoy good food, be sure to share the table AND the kitchen with others.  ~Love Mom





Ingredients:
Neese's Hot Country Sausage, southern style (there really is no other option)
Buns
Sliced cheddar cheese
A fresh, local in-season tomato
lettuce
8-10 eggs scrambled
Mayo

Preparation:
Make 6-8 large, thin sausage patties and cook them until dark brown on each side
Remove to a paper towel lined plate to drain\
Scramble eggs in a bowl and season with a little salt and pepper.
Drain all of the fat from the pan that you cooked the sausage in and then add a tablespoon of butter over medium heat.
Cook eggs constantly stirring and monitoring (remember to take eggs off right before they are completely cooked because they continue cooking in the bowl you move them to!  No one likes over-cooked eggs!)
Remove eggs to a bowl.
Toast buns and slice you tomato and lettuce.
It's time to assemble to goodness!
Bun, mayo, tomato, lettuce, eggs, sausage, cheese, bun.  That's how it's done according to the Chat Rat!  Enjoy!
