Carribean Jerk Snapper
One time when we were in the Florida Keys visiting Papa Robert, I ordered a yellow tail snapper dish at a really nice restaurant because I love snapper. I love all fish really. They served it to me covered in a delicious, rich, white wine sauce. Here's the problem with that....I couldn't see much less taste the fish and for me that is a huge mistake when it comes to my seafood. Important lesson here: don't over sauce, overcook, cover up, or take away from fresh seafood. It is always the star of the show. This is a super simple recipe for a sweet and only slightly spicy snapper! It's perfect for a light dinner that showcases the flavor of the fish.

Ingredients:
Red Snapper filets
A Caribbean Jerk marinade of your choice (I personally like Lawry's - it's cheap and good)
Preparation:
Place filets in a baking dish and brush both sides with marinade
Preheat oven to 400
Bake for about 10 minutes (12 minutes for thicker filets)
Remove from oven and brush cooked filets again with marinade before serving.
