Broiled Salmon with Tropical Fruit Salsa

Beautiful!

This dish is not only looks fancy but it also has a fresh, clean taste.  It's healthy and really quick & easy to make.  I love salmon but Gordon doesn't so dousing it is the colorful and tasty fruit salsa helps us all to enjoy it!

Ingredients:
4 salmon fillets
2 tablespoons olive oil for searing
2 cups of mango, pineapple, papaya frozen fruit blend (Walmart has one I love by New World Farms that is inexpensive and makes great smoothies too)
1/4 of a red onion diced
1/4 diced jalapeño (only if Maddie isn't here)
juice of 1/2 a lime
a little chopped cilantro (I only use a little because I'm not a huge fan)

Preparation:
Preheat oven to 400
Put frozen fruit in a microwave safe bowl and microwave for about 45 seconds or just softened a little but still cold and firm
Chop the fruit and mix with the red onion, jalapeño, lime juice, and cilantro
Place salsa in fridge until time to serve
Season salmon with a little salt and pepper
Heat oil on medium high in an oven-proof pan
Sear salmon for about 1 minute per side on medium high (be careful not to let it stick - using a non-stick pan helps a lot)
Move pan to oven and cook salmon through, about 6-8 minutes tops depending on thickness of salmon
Remove from oven and allow salmon to cool for 5 minutes
Plate salmon and top with generous amount of salsa
