The breakfast bagel: this is a once a month weekend thing. A once a month weekend so good to eat thing! This is a Knox and Chatham favorite thing! It's only properly done on the everything bagel. Just saying. This breakfast sandwich became our first love way before I started making it at home. In case you kids don't remember, this breakfast has a special origin for us: Ken's Bagels & Deli on Wrightsville Ave in Wilmington NC. For a few special years, Gordon and I would go to Ken's and pick up breakfast after running the loop at Wrightsville Beach or after a long night talking on the hammock at Dogwood Lane. There was a lot of love for Ken's because it was a big part of our love!
Ingredients:
Everything bagels
Bacon, cut in half and cooking slightly crispy
Cheddar cheese
Pepper jack cheese
Lettuce
Fresh, local, summer tomato
Eggs, fried hard
Mayo

Preparation:
Toast bagel
Add mayo to top piece
Tomato must go on top of mayonnaise
Salt and pepper tomato
Top the tomato with lettuce
On bottom piece of bagel, add cheeses
Add egg and top with bacon
Fit two stacks together and enjoy or wrap in tin foil and take to the beach!
