Chicken Tenders

We love us some chicken tenders don't we! We have them like twice a month and it's super easy to make them at home rather than buy them at a fast food place or in the frozen foods section at the grocery store. Avery and Chatham kill these every time! (Daddy likes them too)
Ingredients:
1 lbs. Chicken tenderloins (or buy chicken breasts and cut them yourself)
1/2 cup milk or water
1 egg
1 cup Italian seasoned panko
1 cup Italian seasoned bread crumbs
1/4 cup grated Parmesan cheese (optional)
About 1 cup peanut oil or other oil for frying
Preparation:
In a shallow dish, whisk the milk or water and the egg until mixed well.

In another shallow dish, mix the panko and bread crumbs and Parmesan
cheese if using.
Dip tenderloins in egg mixture and then coat well on both sides in bread crumb mixture.

Set them all aside on a plate.
Heat oil to medium high in a large pan and preheat oven to 350.
Once oil is hot (test it with a few bread crumbs, they should sizzle in the oil) add coated chicken tenders to the hot oil in batches, not over crowding the pan or your oil will lose too much heat.
Cook chicken about 1-1 1/2 minute per side just to get a crispy outside.
Move chicken tenders to a baking pan and finish in the oven for about 10-15 minutes depending on thickness.
Remove from oven and let cool.
Serving ideas:
Awesome over a salad as shown above
Great with mac & cheese for a homey meal
Save them for prepping lunches for a week
Freeze a bunch to pull out whenever

Change up the seasonings by using plain panko and lemon pepper seasoning, italian seasoning, etc.
