Breakfast Burritos



The breakfast burrito.  It's really the perfect breakfast.  Tortilla, cheese, eggs, sausage.  Love!

Ingredients:
Flour tortillas (taco or burrito size)
12 eggs
1 package Neese's hot sausage
1 package cheddar cheese sliced or shredded
sour cream
Cholula
Salsa or sliced tomatoes

Preparation:
First cook sausage, chopping finely.
Drain sausage and wipe extra grease from pan.
Return sausage to pan.
Whisk eggs in a bowl and season with salt and pepper.
Add eggs to sausage and stir constantly until eggs are cooked through.
Remove from heat and put mixture in a bowl.
Time to assemble burritos!
Place a tortilla on a plate and add some cheese one side.
Warm in microwave for 10 seconds.
Top cheese with egg/sausage mixture.
Top egg mixture with whatever you like: salsa, tomatoes, cholula, etc
Spread a layer of sour cream to the other side of tortilla.
Fold in sides of tortilla and then roll up.
Enjoy!
