Bacon Jalapeño Quesadillas
There used to be a restaurant in Wilmington called Rock-Ola Cafe and they were known for their bacon quesadillas. Ever since your dad ate them there, it's the only kind of quesadilla he wants. Weird...I know!
It's hard to feed all of you people sometimes! The boys especially are hungry ALL THE TIME! So sometimes you just need a few quick and easy recipes that will fill everyone up fast! These quick bacon quesadillas are one of those. They are simple, no fuss, and a good snack, lunch, or even dinner with sides. Plus you can change up the fillings to anything you like.
Ingredients:
Burrito sized flour tortillas
Any kind of shredded Mexican cheese blend
1 package bacon
1/2 pound of beef
1 tablespoon Taco seasoning
1 small onion, diced
1/2 of a 4oz can diced jalapeños
Shredded lettuce, sour cream & salsa for topping
Preparation:
Cook bacon and set aside to cool. Dice or crumble.
Cook beef, drain, add a little water and taco seasoning. Set aside in a bowl.
Using the same pan you cooked the bacon in with a little of the bacon fat, cook diced onions and jalapeños until soft, 2-3 minutes. Set aside in a small bowl.
Pizza Stone method: Preheat oven to 400 and place a well seasoned pizza stone in there to heat up.
Once oven and stone are preheated begin assembling your quesadillas.
Add a layer of cheese to one tortilla, top with bacon, beef, some onion/jalapeños, and more cheese.
Add the top tortilla and place on the pizza stone.
Cook the first tortilla about 4-5 minutes. (turn oven light on to keep a check on browning)
Remove quesadilla to a plate to cool and add the next one to the stone.
Cook the next quesadilla 4-5 minutes and remove stacking on the previous one.
Repeat process cooking remaining quesadillas for 4 minutes each.
Once all are cooked, use a pizza cutter to cut quesadillas into 4 triangles each.
Serve topped with shredded lettuce, sour cream and salsa!
Skillet method: In the same skillet you cooked the bacon and the onions/jalapeños, turn heat on medium and place tortilla in skillet. Add cheese only to 1 half. Top cheese with bacon, beef, onions and jalapeños. Fold unused half over. Let cook for a minute and then flip to cook on the other side. This is like making grilled cheese so you’ve got to keep checking that your tortilla isn’t burning. Remove once browned on both side and cheese is melted through. Use a pizza cutter or knife to cut into triangles.
