Baked Ziti Daddy's Way
No matter how fancy the Italian restaurant, the Coach usually orders Baked Ziti. Anything Italian and baked with a lot of cheese is always a winner in our house but baked ziti is the Coach's favorite one! (you kids kind of like it too)
Ingredients:
16 oz box ziti
2 pounds lean ground beef
3 jars favorite pasta sauce
12 pepperoni, cut in quarters
1 shot glass vodka
1/2 cup grated Parmesan cheese
15 oz container of low-fat ricotta
4 cups shredded mozzarella cheese
basil
oregano
salt & pepper
Preparation:
Season beef with salt, pepper, and garlic powder.
Brown beef and finely chop while browning.
Drain beef well and return it to pan.
Add all 3 jars of sauce
Add 1 shot glass of good vodka
Add 1/2 cup grated Parmesan
Add pepperoni
Mix together well. reduce heat and let simmer for 1 hour.
Boil ziti according to box instructions and drain.
Add sauce to ziti.
Add container of ricotta to ziti and 1 cup of mozzarella cheese. Mix well.
Pour most into a 9x13 baking dish until almost full, smooth out.
Pour remaining into a smaller dish.
Top with remaining mozzarella.
Bake at 375 for 45 minutes.
Broil for 1 minute to crust up the cheese. (optional)
*you can freeze the extra as well!
