Avery's Pumpkin Chocolate Chip Pancakes




















Pumpkin.  Chocolate Chips.  Pancakes.  Do we need anything else for happiness?  Ok, maybe syrup.  But if you ask Avery Sloane, no syrup necessary!  There is nothing I love more than cooking with you Avery.  You are my Angel Pie! Always sweet, always spreading sunshine and butterflies to us all. If you were a pancake you would be a chocolate chip pumpkin pancake!


Ingredients:
Pancake mix (or make your own but if you buy mix I like Krusteaz)
Mini-chocolate chips
1/2 cup of pumpkin puree (double if you're making more than 8 pancakes)
1/2 teaspoon vanilla
Cinnamon
Butter

Preparation:
Prepare mix for # of pancakes you need
Add 1/2 cup of pumpkin puree (double if you're making more than 8 pancakes)
Mix in 1/2 teaspoon vanilla and a few dashes of cinnamon.
Let batter sit and prepare pan.
Heat a pan or cast iron skillet to medium heat and add a tablespoon of butter.
Once butter is melted and pan is hot, use 1/3 cup measuring cup to scoop batter into pan.
Sprinkle chocolate chips over pancake.
Once it starts to bubble up, about 30 seconds, flip and cook for a few seconds on the other side.  Remove to a plate and continue until all are cooked.
Serve with warm maple syrup (unless you are Avery!)
